In Bulgaria, meatballs are called 'kiufte' and are usually made of a mixture of beef and pork with breadcrumbs and sliced onions. Many other variations exist including different kinds of meat and chopped vegetables. Kifte is one of Bulgaria’s most popular dishes. It is usually consumed as a main course with green salad, or many different side salads. Kiufte can also be served in stews with sauce, but this way they are usually made smaller. Kiufte is made of minced meat, onion and ingredients. According to the classic Bulgarian recipe the meat that is used should be fatty pork and beef meat, mixed in 60:40 proportions. A lot of people skip the “fatty” part of the meat, but the “real” kiufteta need a little fat for their typical flavor. After the meat is minced wet bread should be added to it, as well as salt, green onions and eggs. According to the region in Bulgaria, different ingredients are added, but the one that is necessary is the savory. Kiufte is usually served fried, so it should be and this is why it should be rolled in flour. The chili kiufte, made with hot red pepper is called “nevrozno” kiufte (nervous kiufte).
